Heart


The picture above is the actual heart I got from the grocery Store. Before I started to butcher the heart I watched Chris Cosentino break down a beef heart (On Youtube). I removed all of the fat and silver skin and sliced them into about 2 oz pieces. I seasoned the hearts with lemon, salt, pepper, and olive oil. I grilled the heart for about 5 minutes on each side and then got to taste it. The heart was a little chewy probably because I over cooked it slightly. It had a good flavor though. I really can't see most people eating a 8 oz "steak " of heart, but what I can easily see is brunoise of heart going into sauces or braises to give tremndous flavor.
