Bacon, Egg, and Brains ???

For the brains I recently purchased I decided I wanted to make a bacon, egg, cheese, and fried brain sandwich. For me, this type of food is really exciting and fun. I think I will poach the brains, then chill them, and then bread and fry. Is this the right technique for cooking the brains? Should I soak in milk before hand?
