Looks amazing! For the oyster dish, instead of using celery root for the puree you could use salsify so you still get still get a similar effect but with an oyster flavour. I see you are already using salsify for the quail dish though. I especially love the fusion ideas you've got going with the steak dish.
ReplyDeleteI think everything will come down to your cooking techniques and execution.You could try asking Dave Arnold's advice. It would have been awesome if you could have asked Nathan Myrhvold when he was on the Cooking Issues show a few weeks back!
Thanks for the support and tips. To get oyster flavor into the celery root puree I am going to puree the celery root with the oyster liquor and butter. Never tried this, but it seems like a good idea to me.
